Chocolate Cranberry Crackles
Ingredients:
- 4 squares (1 oz. each) unsweetened chocolate, melted and cooled
- 1/2 cup vegetable oil
- 2 cups sugar
- 4 eggs
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 2 teaspoons Clabber Girl Baking Powder
- 1/2 teaspoon salt
- 1 cup dried cranberries
- 1/2 cup chocolate chips
- 1/2 cup walnuts, chopped
- 1/2 cup (approximate) powdered sugar
Instructions:
In a large bowl, beat chocolate, oil, and 2 cups sugar until creamy. Beat in eggs, one at a time. Add vanilla. In a separate bowl, combine flour, Clabber Girl Baking Powder and salt; beat into sugar mixture. Stir in cranberries, chocolate chips and walnuts. Chill for 1 to 2 hours or until the dough is easy to handle.
Drop by teaspoonfuls into powdered sugar; roll to coat. Place on greased cookie sheet.
Bake at 350 degrees F for 10 to 12 minutes. Cool on rack. Makes 4 dozen cookies
