Even if you are a traditional Turkey family, chances are you have varied some throughout the years, occasionally working with different methods of cooking the bird. There is the original roast and bake, in which you baste the bird yourself. This method is commonly used for a special presentation at the table, where you want the turkey to be moist throughout (of course) and delicately brown on top for elegant carving at the table; there is the roasting bag method, in which the turkey may be stuffed or unstuffed - excellent for buffet style dining; herb infused turkey, where a selection of spices are rubbed underneath the skin and inside the cavity prior to roasting; low fat turkey - (Fat pads are removed, and turkey is baked with no stuffing); kosher, smoked, or deep fried turkey and turkey soaked in brine.
We have listed some of our own favorites. Remember, you can lower the fat in each of these by simply removing the fat pads during cleaning and preparing the bird.
